Hey Shane, I'm psyched you've coming aboard for this.
I'm right now working on a document laying out the differences between
ArcGIS Server and GeoServer, laying out every feature. I'm trying to put
links to documentation (and only listing as _real_ features if things are
documented), but I can't find anything for the excel plugin.
If in you're maintaining the excel module one really great thing you could
do is add something about it to the docs. Like under
http://docs.geoserver.org/stable/en/user/extensions/index.html It can be
pretty simple - how to install, any options to set, and how to use it (just
setting the output format on wfs).
