Just as a follow up on this, I noticed that Daniele's gdalinfo report was
different to mine.
Band 1 Block=256x256 Type=Byte, ColorInterp=Palette
as opposed to
Band 1 Block=4000x2 Type=Byte, ColorInterp=Palette
I re-processed my tiles, this time including a -co "BLOCKXSIZE=256"
parameter, and hey presto! My rasters are pink no longer.
