Try http://ian01.geog.psu.edu/geoserver_docs/ which describes how I went about installing GeoServer on a Fedora 13 machine. I'm an old school Unix hacker so I don't really understand the differences between Linux brands so it may or may not apply to how you do things on an Ubuntu server.
