After my research I want to share this links for the newbies like me :) ...
In my case, the GeoServer deploy is in a remote machine so the profiling
must be done via network.
To accomplish the profiling task I have enabled the JMX of tomcat6 and in
this way I can access to the server data remotely.
Howto enable JMX => (http://www.opennms.org/wiki/Tomcat_6_JMX_How-To)
After the setup, I have installed VisualVM in my OS X (we can use jConsole
as well) and just connect to the remote server.
