Hi Bruce,

the print module for GeoServer really just wraps the MapFish print module. You 
may get better answers on the mapfish-users list. But creating multi-page 
documents with attribute tables is definitely possible with it. For the 
client-side, you may want to consider using GeoExt. If you want to have an 
attribute table, you should add your parcels to the map using a vector layer. 
Look at these example to get you started - they also contain the relevant links 
for MapFish and the GeoServer print module:
