In the 1.7.x series you can set GEOSERVER_WMS_URL to something bogus, and then it'll fail to fetch the getcapabilities document.

In 2.0.1 and onwards it's all done in Java and you can't really interfere with it (except unzip the gwc jar and mess around with the Spring XML, but then you are on your own).

So if you need them to have the same name, but behave differently from the default, then you should probably have a separate GWC installation in parallel with GeoServer. I know Gabriel is working on adding more GWC configuration options to Wicket, but it'll probably take a bit of time to get to format modifiers.
