This is a known issue in raster reprojection + tiled output that has been
fixed recently.
Not sure if the fix managed to get in before 2.1 beta3, you should
try a nightly build to be sure to have the fix:
http://gridlock.opengeo.org/geoserver/trunk/

Changes were not trivial so they haven't been backported to the 2.0.x
series.
