The question was about WFS GetFeature request, not WMS GetFeatureInfo.
WFS is basically meant for delivering vector data and fid is the unique
identifier of features and thus most often essential. I would say that
it would be better to get rid of it on client side.

Geoserver GUI to make views where you can select only the data you want
