Hi Dan,
If you just want some code to use the new layer in a openlayers map, simply
use the Layer Preview and view the source on it. It is probably much more
than you need but it will have the code you are looking for.
Past that I would checkout the openlayers examples [1], which contains lots
of examples including overlaying a geoserver wms onto a google base map. To
answer your question no you don't have to change the projection on the
server side. GeoServer will reproject for you if your openlayers client is
configured properly. Again see the examples.
