Well there is not on in this case. The above datastores are
supported because they are all file based and can be created from scratch by
just creating a file within a default directory. Somewhere under the data
directory. Unfortunately since postgresql involves an external server we
can't make the same assumption. I guess we could configure it with a
localhost... but still no guarantee. So you have to create it before hand.

You an POST (to add a new one) or PUT to modify an existing one as described
here:

Then after that the conversion should work by specifying your new postgis
store as the datastore in the PUT url.
