Hi Andrea,
After some more testing, it looks like GeoServer is definitely in Full
Streaming mode, even with GZip compression. This looks like an issue with
UDig. I just did a big WFS request, and watched my network card status. The
data starts streaming almost immediately as you said.
GeoServer = All Good.
