Thanks Christian. The explantion was useful, but it didn't work. I tried my luck modifying directly under the admin page "Global settings", the input text for "log location" and wrote the full path: /var/log/jboss/geoserver.log
It worked!!! Nonetheless, it definitely didn't work as per documentation, I don't know if someone wants to replicate the error, or if I should create a jira for that...
