I just came across some other config items which appear to have been added
in 2.1.x and cause 2.0.x issues on start up:
* wcs.xml
+ <maxInputMemory>0</maxInputMemory>
+ <maxOutputMemory>0</maxOutputMemory>
* wfs.xml
+ <encodeFeatureMember>false</encodeFeatureMember>
