GeoServer reads data from sources in chunks, so a single request should
never be able
to make it go in out of memory condition.
Many parallel requests, each using a chunk, can instead, that's why we have
service limits
and the control-flow extension.
The only case in which an OOM is likely, even with a single request, is when
the data source
does not allow GeoServer to read information in chunks: for example, a very
large jpeg file.
Raster wise, as long as you have inner tiling and overviews you should be
fine.
By personal experience I've seen up to 150 millions polygons published out
of an Oracle
cluster, and image mosaics large several terabytes.
One of the customers we follow with a commercial support contract actually
goes up
to the petabytes, but in that case a custom made data access system is in
place
(no big surprise, all high level installs I've seen have something custom in
their
GeoServer, be it a security subsystem, a clustering solution or a custom
data access layer talking to their internal IT system APIs).
