By the stack trace it seems the log location has been wiped out of the
configuration.
Normally the log location would be "logs/geoserver.log" in the "global
settings" page,
I guess it's not set to... nothing?

I see that in that page we have no check preventing the user from wiping out
that configuration.
If it's empty please set it back to the default value
