Would it be possible for you to use a VIEW?
CREATE VIEW spatial_mytable AS SELECT id, msg, ST_PointFromText("POINT(" ||
coordinates || ")", 4326) AS the_geom FROM mytable;
INSERT INTO geometry_columns(f_table_catalog, f_table_schema, f_table_name,
f_geometry_column, coord_dimension, srid, "type") VALUES ('', '', 'mytable',
'the_geom', 2, 4326, 'POINT');
GeoServer would then be able to serve that view as if it were a normal table
with a full-fledged geometry column.

All of the data generated in your IT infrastructure is seriously valuable.
Why? It contains a definitive record of application performance, security
threats, fraudulent activity, and more. Splunk takes this data and makes
sense of it. IT sense. And common sense.
