Hi Milo,
although I'm not sure about what's happening to your tomcat, I can provide
you some feedbacks on the logs you ha reported.
Please, read below...

I can confirm that... It's only a warning telling you that the GDAL plugin
won't be enabled (not an issue if you don't need to access some specific
raster formats like DTED, NITF, MrSID,....)

As far as I can see from the GeoServer log, I would suggest to take a look
on this post:
http://geo-solutions.blogspot.com/2010/05/fix-geotools-and-geoserver-not-able-to.html

It basically provides a workaround for the last Tomcat versions (> 6.0.2x).
These Tomcat versions added some features to prevent memory leak which may
result in deregistering ServiceProviderInterfaces (SPIs). As you can see
from your GeoServer log the WorldImageReader (WorldImageReader.java:270) is
unable to find a proper ImageReader to access data. I think that this is
happening due to the Tomcat behaviour deregistering SPIs. Please, try the
suggested workaround and let me know if this solve that part of the issue on
GeoServer.

That said, I don't have an idea on why the "entire tomcat is down" and
whether the suggested workaround will also result in fixing this.
What do you mean with "is down" -> Isn't the process running anymore?

Please, let us know.
Regards, Daniele
