I'm trying to get a box running Ubuntu 10.04 configured to run GeoServer in a 
production environment.

I've tried to follow the instructions at: 
http://docs.geoserver.org/latest/en/user/production/index.html

I'm running Oracle's JRE:

$ java -version
java version "1.6.0_24"
Java(TM) SE Runtime Environment (build 1.6.0_24-b07)
Java HotSpot(TM) 64-Bit Server VM (build 19.1-b02, mixed mode)
$

I think I have jai_imageio loaded correctly, at least I see no errors.  I'm 
seeing stuff in catalina.out, though, that suggests I have more to do:
