Well, if the PNG output is a recently added feature, it probably is not in
the GeoServer community module which relies on a specific version of mapfish
(IIRC, several months old at this point.)
If you want a newer version in GeoServer, the quickest way is going to be to
fix up the community module yourself. It may just be a matter of grabbing
the community module sources from SVN and changing the version in the
pom.xml (which describes the dependencies for the module, among other
things.) If you're not sure what to do, feel free to ask about it on the
IRC channel (we are getting a little beyond the scope of the users list.)

good start too.
