Because I see it's possible to select, e.g. PNG as output format, so I'm just wondering if we could also customize the colors.

Anyway, can we specify resolution of the returned WCS data?

Right, WCS is for data.  It does not need to be raster data (image) but it can be any sort of data that is tied to a grid.
