Hi Andre, thanks for the interest.  I'm cc'ing GeoServer's users mailing
list in case any other users want to chime in.

As far as I know there are no issues with running the scriptlet extension
in 2.1.2; you should be able to simply create a scripts/processes/
directory in your datadir and start writing scripts.

The examples/processes/ directory mentioned in the docs is in GeoServer's
sources, not in the data directory (a nice addition to the scriptlet
extension might be to have the extension create it on first startup.)

I should point out that the scriptlet module is more-or-less unmaintained
at this point - it was sort of an experiment and I'm not using it for
anything.  However, Tim Schaub (also cc'ed) has been working on integrating
it with the JavaScript variant of GeoScript - that project lives on Github
at https://github.com/tschaub/geoserver-geoscript-js .  You might find it
interesting as it provides some adapters around GeoTools APIs to make them
more convenient to use from JavaScript.
