The printing module comes from Mapfish, the documentation for the
configuration file is on their website: http://www.mapfish.org/doc/print/
Part of your confusion probably arises from the fact that YAML specifies
only structure, not interpretation. Sort of like how the XML specification
will not be much help in figuring out how to write SLD files. But we
should probably have a link to the mapfish docs from the GeoServer manual (
http://docs.geoserver.org/stable/en/user/community/printing/index.html).
