Just a hint – I have done something similar a few years ago, querying a DEM on 
a server and computing viewsheds on the fly. I think the problem you are 
encountering is because you are using a WMS – a WCS is much more suited, as it 
serves raw data, not rendered images.

I remember that at the time I was experiencing some issues, as what I needed 
were raw int values for elevation and I  Geoserver did support this well – we 
actually migrated our partners (the data custodians) from Deegree to achieve 
exactly this. I ingested the data through a custom-made Geotools-based code.
