It seems that you have an outdated JAI library installed in the JDK that's
running
GeoServer. Not sure how it got there though, but some apps like gvSig and
some ESRI tools used to force the old JAI in the JDK making most GeoTools
based applications
(inclusing GeoServer) stop working
