I get this error when trying to do a label. 2.1.3, tomcat6 on Debian. 

I check the server status. 

It says: 
GeoServer can access 20 different fonts. Full list of available fonts.

I click on "Full list of available fonts"

It shows a servlet exception: 
java.lang.Error: Probable fatal error:No fonts found.

So does it have fonts or not? How do I give it some?

Things I already tried. 
One suggestion was to install more fonts on Debian using apt-get. I did.
That's probably why there are 20 and not 18 now. 
One suggestion was to add headless to the JVM parameters, since this is a
headless installation. 
I *think* I have done this. I added this to catalina.sh: 

JAVA_OPTS="$JAVA_OPTS -Djava.awt.headless=true"
