Hello Mike,
currently the NetCDF stuff is not yet fully backported to GeoServer 2.4.x,
so basically for a while building the NetCDF stuff and using it can be done
only through some GeoServer forks around.
In any case, if you want to do some tests and start playing with it, here

there are some instructions on how to build locally a GeoServer
Multidimensional.
Also the same address contains a full opensource workshop demonstrating
step-by-step the use of Multidimensional plugins other than import/export
of NetCDF files.
A ready to use Tomcat with GeoServer Multidim is also available through the
Multidim Workshop binaries here:
