Yes. For any layer you don't want appearing in GetCapabilties uncheck the
"advertised" tickbox on the publishing tab. If you want to do 80 of them
it's probably easiest to change the XML using a good text editor instead.
I'm not really clear on what you want with the second part.
If you want to ask for all 80 layers as once, but not as from the
layergroup, you can do it with the getmap request - just list them all
after the layers= - it's a comma delimited list of layers.
