For GeoServer (ie not GeoNetwork) you can access the password information
on the file system. There is a root password you are asked to make a note
of during installation, as well as an "admin" password which is used to
login to the web administration system.
If you really need to kick it old school you can perform many common
changes by editing the files directly and "restart" GeoServer.
