We had some problems with dates using Geoserver and finally the trick was to 
add 
"-Duser.timezone=GMT" in startup.bat.

But now we're trying to make Geoserver work as a .war, in a Tomcat server. But 
we don't want the 
"user.timezone" parameter to affect the other applications running on this 
Tomcat instance!

Do you know what would be the best way to tell Geoserver to use GMT/UTC as the 
timezone without 
changing this setting on the entire Tomcat  container?
