Hi Matteo,
you can try using the Processors.getProcessFactories() method which will
return all the ProcessFactory implementations. Each ProcessFactory contains
a list of Process and can return a new instance of the Process you require,
if present. Anyway you may find all the processes in the GeoServer/Geotools
modules I described above.
