I can see from the following link

which states
GetFeatureInfo can generate output in various formats: GML2, plain text and
HTML. Templating is concerned with the HTML one.
I would like to use templating on the text/plain format, which is the default
format as far as I have experienced. Is this possible?
I am looking for options to customize the response from a GetFeatureInfo on a
raster source, and I don't have control over the users application so I cannot
handle the response client side.
