Hi Murad,
PropertyName cannot contain an expression (by spec), but there is a filter
function that can do
what you want, it's called "property":
http://docs.geoserver.org/latest/en/user/filter/function_reference.html#feature-functions
So the SLD would look like:
<sld:Label>
<ogc:Function name="property">
<ogc:Function name="env">
<ogc:Literal>labelField</ogc:Literal>
<ogc:Literal>room_number</ogc:Literal>
</ogc:Function>
</ogc:Function>
</sld:Label>
This should allow you to choose the property you want the label to display
from the GetMap URL
