Thanks Andrea for the answer. Unfortunately, I have added the .prj files with no luck. I have also tried different file formats (png, geotiff) and pixel types (integer and float), and I've always got the same error.
Moreover, I haven't been able to publish a mosaic that is correctly published on a different server (I mean, copying the same files to my test server and publishing them from Geoserver interface fails). I am starting to think that there is some bug on the plugin, and that it may only arise under some environment circumstances. But it doesn't seem to be related with Geoserver version, as both the successfully and the failing server are using 2.8.1 version (and I've got the same error on a 3rd test server using version 2.8.0).
