Take the geotools mongodb unsupported plugin
<https://github.com/geotools/geotools/tree/master/modules/unsupported/mongodb>
for
the geotools release you are using, compile into a jar and drop into
geoserver libs folder.
Unsupported plugins like this can be added to the library if you are
interested in volunteering.
