Hi Andrea, tnx for the suggestions. I've checked the Mapfish Print v.3.6.0 classes, and I see that they have now also included all jt-* classes.
They are using jt-colorindex-1.0.8.jar, and in Geoserver v2.8 we are using jt-colorindex-1.0.6.jar, this where the problem is coming from, not from the JAI classes. I've just created multiple Tomcat Instances and separated GS and MapFish apps.
