Andres, please install the GeoServer NetCDF plugin, listed under the "Coverage Formats" section of the download page: http://geoserver.org/release/2.8.x/ http://ares.boundlessgeo.com/geoserver/2.8.x/ext-latest/geoserver-2.8-SNAPSHOT-netcdf-plugin.zip
(Not to be confused with the NetCDF output plugin (netcdf-out) in the "Output Formats" section, which is used to create NetCDF responses.)
