Hi Hans,
we are in the process of updating JAI-EXT (a JAI replacement being
currently used by GeoServer) to stop depending on jaitools.
Once released (I guess before the end of the week or early next week) it
will include that missing method implementation so that it should fix the
issue.
We will keep you updated.
