The summary of the comments (which may or may not be correct) is that GeoServer
doesn't do it, but other tools like MapServer.

I have a srtm Dem layer which I am trying to render in geoserver. I
would ideally want to produce a TMS with png images which are 16 bit
images as I want the elevation values in the png. I see the images
produced by geoserver are 8bit images.
Is it possible for geoserver to be configured to give output of 16bit
images when using TMS.
