Hi, We finally got it solved. Apparently someone/something launched a super-massive query over the dblink so the server started to behave strange and yesterday afternoon we had to reboot it because it was completely down. After that all the connections to Oracle were working as expected. We've also deleted the dblink just in case it was affecting the server's performance.
I’m 100% sure that it had nothing to do with GeoServer as everything in that machine have been working for months without any problem. Andrea, yeah, that was the weirdest thing, SQL queries from SQL developer or loading those spatial tables from QGIS were working fine... Thanks for your time and help.
