You may want to look into using an Image Mosaic
(http://docs.geoserver.org/latest/en/user/data/raster/imagemosaic/index.html).
Another option are layer groups
(http://docs.geoserver.org/latest/en/user/data/webadmin/layergroups.html),
but they may be more suitable for smaller collections of layers that you
only sometimes wish to display together as a single layer.
