GML output is supported by WFS, WMS and WPS services. You are correct that
the GML datastore was dropped. The volunteer got frustrated as many
questions were due to only having the GML file, when both a gml file and a
schema are required for parsing.

If you know of anyone interested in picking up this work the GeoTools
library has a more forgiving parser now, which is willing to read the file
once to guess what the schema should be, and then read a second time to
parse the contents.
