Thanks Andrea and Jukka for your answers!
Our solution was to reinstall GDAL with MrSID support.
We compiled from the source and version 1.11.5 seems to work with GeoServer
GDAL extension .
We first tried 2.3.1, but this did not seem to work, possibly the problem is in
renaming of the jni-s (GDAL 1.x has libgdalconstjni.so, libgdaljni.so,
libogrjni.so and libosrjni.so , but GDAL 2.X has libgdalalljni.so).

Each format has its own small set of classes.

have a version of GDAL that supports OpenJPEG?

He he, that was my same reaction when I first saw it, but Simone explained that
they needed special support for a few variations in behavior between
the various formats. That was a long time ago, maybe today GDAL is well behaved
enough that we could just have a single generic driver for it [1],
or maybe a generic one plus special ones for the oddly behaved formats. Dunno,
I haven't looked back at it in years, I'm just parroting back
what I've been told many years ago, when I joined GeoSolutions

[1]: if that was done, instead of having one entry per format in the UI, we'd
have a single "Generic GDAL reader" entry.
The relationship is "one factory class, one entry" in the UI.
