Hi Laura,
the time dimension gets disabled when there is no date or time attribute.
I'm guessing that what you did in QGIS produced a text attribute, since
there is no Timestamp
datatype support in DBF (not in the official one at least, some variant
like I believe foxpro one
had it), only has date (as in the day).

If you need full support probably best stay away from shapefile and use a
geopackage instead.
If you need reasons to try out shapefile, there is a web site enumerating
them (yes, quite
opinionated, to the point of being fun):
