A 'Read timed out' error is caused when there was a communication or data transfer issue between the client and the server. (this may be due to the remote WFS grinding to a halt or network instabilities)
You may be able to alleviate the problem using proper (spatial) indexing of the source data and/or more RAM and increasing the timeout interval, not sure if the latter can be done from within geoserver or you need to set it as a JVM/environment option.
