In principle, I would be happy to help out with coding, but for now
consider myself too much a beginner in geoserver/java etc. to dive into
it. Maybe later ;-)

Ok. After having investigated a bit on the topic I think that the 16
bits Float has been defined to support the HALF data type used by
OpenEXR file format, as TIFF Technical Note 3 so it's not part of the
official TIFF 6.0 specification.
Taking a deeper look at the current TIFF Reader java code I see that
the parts parsing the SampleFormat TAG (ID 339) and BitsPerSample (ID
258) are not supporting this specific new use case.
So I would say that the current version of GeoServer is not supporting
this file format.
You may want to open a JIRA in GeoServer (and a ticket in imageio-ext
<https://github.com/geosolutions-it/imageio-ext> project, too) to
report that.
Code contributions or funding to get it implemented would be more than
welcomed, though.
