You'd like to be able to generate a ColorMap <https://docs.geoserver.org/latest/en/user/styling/sld/reference/rastersymbolizer.html#colormap> in an SLD with more than 255 entries? It should be possible to force GeoServer to generate a palette of up to 64k colors by using the extended ColorMap type <https://docs.geoserver.org/latest/en/user/styling/sld/reference/rastersymbolizer.html#extended> .
