Hi,
as far as I know, there is currently no way to read the attribute table for
a raster dataset.
But the project is completely open source, so anyone can code support for it
<https://github.com/geoserver/geoserver/blob/main/CONTRIBUTING.md>.
It's also possible to contract its development out to a professional
<http://geoserver.org/support/> knowledgeable about the project.
