Ok - I'm getting somewhere. I downloaded https://build.geoserver.org/geoserver/main/community-latest/geoserver-2.20-SNAPSHOT-saml-plugin.zip
and moved the contents of that zip file into $GEOSERVER_ROOT/webapps/geoserver/WEB-INF/lib and now I see a SAMLv2 filter under authentication.
