I just wanted to follow up on this and say that the solution I ended up using was to convert every single band grayscale image to a 3band image using GDAL. Then every file in my image mosaic was 3 bands and then color and grayscale images would display as expected with no further modifications or style customizations needed.

We have had to use custom styles for gray scale images to display properly, tailor the style to the DN range if your data.
