Hi Tiago, I see your point, at the moment it's not possible to have this option enabled per layer and switch at runtime per request.
Thinking out loud, this could be implemented by creating a new hint on the Oracle data store and then binding it in GeoServer to WMS and WFS as a vendor parameter.
